Introduction

These creamy and delicious mashed potatoes are a surprise because they use cottage cheese instead of cream cheese and sour cream. I know you'll love them! These creamy and delicious mashed potatoes are a surprise because they use cottage cheese instead of cream cheese and sour cream. I know you'll love them!
Number of Servings: 10

Ingredients

    3-4 lbs of potatoes
    6 c chicken broth
    1/2 c low fat milk
    1 c low fat cottage cheese
    1/2 t salt
    1/2 t onion powder
    1/2 t garlic powder

Directions

1)Peel and cut potatoes into even size pieces. Boil in broth until done
2)Meanwhile, use your blender to blend milk and cottage cheese until smooth.
3)Add seasonings to cottage cheese mixture and blend until combined
4)Drain potatoes, and mash with desired amount of cottage cheese mixture- I use almost all of it
5)If not serving right away or if they are not hot enough, place in a 350 degree oven for desired length of time.


Serving Size: Makes ten 1/2 c servings
