Ingredients

    1 bunch of fresh asparagus (approx 475 grams)
    12 oz chicken breast cut into small pieces
    1 can petite diced tomatoes
    4 oz penne pasta
    1 tablespoon unsalted butter
    2 teaspoons minced garlic
    1/4 cup diced onion
    1 teaspoon olive oil
    seasoning to taste (white pepper, black pepper, red pepper flakes)

Tips

take care to not overcook the asparagus or pasta!


Directions

cook pasta until almost done (1-2 minutes short)

in a large skillet heat olive oil and saute onions and garlic until translucent - add chicken and cook until no pink is showing on the outside

cut asparagus in half - add butter to pan and when melted add asparagus and toss to coat - add seasonings - and cook for about 5 minutes

drain tomatoes and reserve liquid - add tomatoes and pasta to the chicken asparagus mixture and toss to coat - cook for 5 minutes, adding reserved tomato liquid as needed to keep from getting too dry, but also don't add all at once, as you do not want the mixture too wet

Serving Size: makes 4 servings
