    1 tbsp olive oil
    450g hot italian sausage, skin removed, broken into chunks
    1 large onion, chopped
    1 coloured pepper, chopped
    3 cloves garlic
    227g mushrooms, sliced
    5oz grape tomatoes
    2 cups zucchini, sliced
    1 can (796ml) diced tomatoes
    3 cups jarred pasta sauce or tomato sauce
    2-3 cups water
    1 1/2 tablespoons crushed peppers
    2 tablespoons italian spices


Heat olive oil in pot. Add sausages and brown until partially cooked. Add onion, pepper, garlic, mushrooms, and grape tomatoes. cook over medium heat until vegetables are crispy tender. Add can tomatoes, pasta sauce, water and spices. Simmer for 1-1 1/2 hours. Add zucchini, then let simmer another 1o minutes or until zucchini is crispy tender. Serve over spaghetti or pasta of your choice.
