Introduction

I used chicken broth... if making vegetarian make sure to switch out the chicken broth for veggie broth! I used chicken broth... if making vegetarian make sure to switch out the chicken broth for veggie broth!

Ingredients

    1 cup dried Quinoa, cooked with chicken broth
    1 cup chopped of the following:
    onion
    carrots
    broccoli
    red pepper
    1 can black beans, drained and rinsed
    extra virgin olive oil
    cumin powder
    salt
    garlic powder

Tips

I used a rice cooker to cook Quinoa, 1 cup dried Quinoa to 2 cups chicken broth. While it cooked I prepped and cooked the veggies and everything finished about the same time.


Directions

Heat olive oil in pan. Saute broccoli, carrots, onion and red bell pepper until soft. Add black beans and spices. Add quinoa. Stir well and serve.
