Ingredients

    Butter, unsalted, .5 cup
    Granulated Sugar, .5 cup
    Brown Sugar, .5 cup, packed
    Eggs, fresh, 2 large
    Banana, fresh, 1 cup, mashed
    Unbleached flour, 1 cup
    King Arthur Unbleached White Whole Wheat flour, 1 cup
    Baking Powder, 1 tsp
    Baking Soda, .5 tsp
    Salt .5 tsp
    Non fat Buttermilk or water 1/4 cup

Tips

This recipe is very adaptable , you can replace some of the fat with more banana, use sour cream or Greek yogurt in place of the liquid, add nuts, chips or diced bananas or coconut .


Directions

Preheat oven to 350 degrees
Grease and flour a 9" x 5" loaf pan
Cream butter and sugars until light and fluffy and eggs one at a time beating well after each addition
Blend in bananas
In a separate bowl sift together flours, baking powder ,baking soda and salt .
Stir in 1/2 the flour mixture stirring until incorporated, then add buttermilk ( or water) and stir until incorporated and finaly add the remaining flour mixture and stir until fully incorporated. Add any optional nuts or chips ( 1/2 cup ) and pour into your pan and bake in the center of your preheated oven for 60 to 75 minutes cool in pan on rack for 15 minutes then turn out of pan and cool for another 15-20 minutes before cutting into 3/4" slices
