    1 # rhubarb, cut into 1/2 inch slices
    1/3 c sugar

    2/3 c sugar
    1/3 c light butter or margarine (soft)
    1 tsp vanilla
    1 egg or 1/4 c egg substitute
    1 1/4 c all-purpose flour
    1/2 c milk (skim or 1%)


Melt the 1/3 c sugar with the rhubarb in a pan. When cool, pour into an 8-inch round pan (well-greased)

Combine the remaining sugar + butter. Then add vanilla and egg or egg substitute. Alternately, add portions of the flour and milk, combining. Pour the batter over the rhubarb in the pan.

Bake at 350 for 35-40 minutes or until cake is set. Let cool somewhat, then invert onto serving plate carefully.
