Introduction

Ingredients

6 medium (5" long) or 2 pounds of sweet potatoes
1/2 cup of brown sugar, packed
3 T of butter
1 T of syrup
2 T of water
Tips
I usually double the mixture but triple the sweet potatoes for a large crowd. This is when the electric fry pan works best.
Directions
1. Clean and boil sweet potatoes (1 1/2 hours or until a fork can go in and out smoothly) - can be done the night before
2. When cooled, peel the potatoes with a knife
3. Slice the potatoes lengthwise with a knife
4. Put butter, syrup, water, and brown sugar in a pan (I use an electric fry pan. They cook better and don't burn.)
5. Place potatoes on top of melted mixture.
6. Turn to potatoes and/or pour the mixture over the tops of the potatoes as they cook.
7. Cook until the mixture is candied
8. Note: The longer these cook on low heat, the better they taste. This is a skill that you have to discover as you continue to make them. ENJOY!
