    2 T. water
    1/3 c. chopped onion
    1 garlic clove
    1 c. uncooked Arborrio or short grain rice
    1/2 c. cooked mashed sweet potatoes
    1/2 c. grated Parmesan cheese
    1/4 t. dried rosemary leaves


Spray a 3-quart non-stick saucepan with oil.
Over medium heat, add water, onion and garlic, cook ~3-4 minutes until onions are soft.
Stir in rice, stir constantly for one minute.
Stir in sweet potato and 1/2 c. broth, stir constantly until absorbed.
Add broth in 1/2 c. increments as it is absorbed. Stir constantly. Repeat until rice is creamy and tender.
Remove from heat.
Stir in Parmesan cheese and rosemary.
Makes 4 servings.

  • I love this recipe. I have made it for my family a couple of times and we all love it. I actually add 1.5 cups of sweet potato and adjust the other ingredients (not the rice) according to taste. - 6/24/09
