Number of Servings: 6


    1lb. (16 oz )Laura's Leen Beef 4% fat
    12 cherry tomatoes
    2 Egg white
    3/4 Progresso Bread Crumbs - Italian Style
    1/2 cup Skim Milk
    1 1/4 Onions, raw
    .5 tsp. Oregano, ground
    1 Tbsp. Parsley, dried
    To taste: Salt
    To taste:Pepper, black


In a bowl, combine all ingredients, except meat and tomatoes. Add mixture to ground beef and mix well. Shape 1/4 cup around each tomato so the tomato is hidden inside the meat ball. (Surprisingly easy!) Spray a baking dish with pam and place meatballs inside with enough space in between. Bake at 375 for 25 to 30 minutes.

They may look dry when you take them out but that's because they are so lean but still very tasty! Throw a little of your favorite tomato sauce with a portion of pasta or make it a sandwich with some healthy wheat bread or bun. Enjoy!
