Introduction

I make a batch of these at the beginning of the week and then I always have a quick, healthy breakfast ready to go in the morning. I make a batch of these at the beginning of the week and then I always have a quick, healthy breakfast ready to go in the morning.

Ingredients

    8 fresh eggs

    Add any veggies or cheese that you like. For mine I prefer the following:

    1 c. diced bell pepper
    1 c. chopped mushrooms
    2 c. fresh spinach
    1 c. shredded mozzarella

    muffin cups

Tips

These are also great for brunches!


Directions

Preheat the oven to 350 degrees Farenheight.

Line a muffin tin with the paper muffin cups.

beat the eggs, then add veggies and cheese. Scoop 1/4-1/2 cup of the mixture into each muffin tin.

Bake for 20 minutes. Allow to cool 1-2 minutes before removing.

If you are storing the extra for later, allow to cool completely before refrigerating.
