Introduction

Ingredients

    4 c. flour
    2/3 c. sugar
    2 t. salt
    1 c. butter/margarine (frozen)
    2 t. baking soda
    1 T. flax seed
    walnuts - small handful, an ounce or so
    cinnamon - to taste
    1 T. vanilla extract

    2 eggs
    1 c. greek yogurt (I used half plain and half vanilla)

Tips

Use whole wheat flour and/or ground oatmeal for added fiber or raisins and other dried fruit for sweetness without sugar. I didn't use lowfat butter or yogurt or anything and these bad boys were still under 200 calories. I did use blue bonnet instead of butter but thats just because I had it on hand (saves about 30 calories a scone). This recipe is very flexible and simple so I suggest trying ways to make it even more Spark friendly and to your liking. All new suggestions welcome. Hope you enjoy!


Directions

Add all dry ingredients together. Grate butter into dry mixture and mix by hand. Whisk eggs and and add yogurt, whipping together. Add eggs/yogurt and walnuts to dry ingredients and mix by hand, kneading together.

You can knead and divide your scones at this point. I grabbed a 1/4 c. measuring cup to make 15 even shaped/sized scones. Spray sheet with Pam and bake for 15 minutes at 400.
