    ½ tablespoon olive oil
    ½ medium onion, choppedd
    ½ green or red bell pepper, chopped
    1/3 cup mushrooms, sliced (optional)
    1/3 cup tomatoes, chopped (optional)
    6 slices Canadian bacon, chopped
    4 whole eggs
    4 egg whites
    4 tablespoons milk
    ¼ teaspoon salt
    1/8 teaspoon black pepper
    1/3 cup 2% shredded cheddar cheese


Method of Preparation:
Preheat oven to 350 degrees.
Heat oil in a small oven proof skillet over medium-high heat. Add all vegetables and Canadian bacon and sauté until vegetables are tender and lightly browned.
Meanwhile, combine eggs, egg whites, milk, salt, and pepper in a medium bowl. Stir well with a whisk.
Spray sides of pan with vegetables with non-stick spray. Pour egg mixture over vegetables in skillet. Cook on stovetop over medium heat until bottom is set (pull in sides of egg and continue to cook).
Sprinkle eggs with cheese and then place entire pan into the oven and bake at 350 degrees until eggs are puffed and set in the center.
Turn oven to broil for last 2 minutes to brown cheese if desired.
Run a knife around edge of pan and slide frittata out onto a serving plate. Slice frittata into wedges and serve warm.
