Ingredients

    1 TBSP Olive Oil
    1/2 Med onion - chopped
    1 jalapeno pepper - seeded and chopped fine
    2 garlic cloves - crushed or minced
    1 TBSP Chili powder
    1/2 tsp cumin
    1/4 tsp black pepper
    1/4 tsp cayenne
    1/2 tsp salt
    1/2 tsp cinnamon
    1 LB ground beef
    8 OZ Diced tomatos - canned
    3/4 cup monteray jack - shredded

Tips

- use an oven safe skillet


Directions

Cook onion for 3 min. with olive oil on med/high - add garlic, jalapeno, spices and cook 1 min. Add beef - cook through(about 7 min), drain. Add tomato and bring to a boil for 5 min. Add shredded cheese over top and broil 5 min. Serve with salad or over fresh baby spinach (not in nutr. info).
