    2 cups Quaker Oat Bran Hot Cereal, uncooked
    1/4 cup firmly packed brown sugar
    2 teaspoons baking powder
    1/2 teaspoon salt
    1 cup no fat milk
    2 eggs whites, slightly beaten
    1/4 Brer Rabbit full flavor molasses or honey
    2 Tablespoons Vegetable Oil

    Preheat oven to 425 .


Preheat oven to 425 F.
Line or spray bottoms of muffin tin . Recipe makes 12 muffins.

Mix try ingredients.
Add all wet ingredients
Combine until everything is moistened.
Bake : 15 ot 17 minutes until golden brown

  • I used 1 C. Oat Bran and 1 C. whole wheat flour to make them a little lighter, substituted 2 T. Brown Sugar Splenda for the sugar, and added 1 T ground flax seed - 10/12/09
