Introduction

This is a slight adaptation to a recipe from KeyIngredient.com (http://www.keyingredient.com/recipes/1215
8060/caramelized-banana-sandwich/). I used Fiber One Whole Wheat bread, which has more fiber, but more calories than other w.w. breads. Instead of grilling the sandwich, I spread the honey/butter mixture onto one side of each piece of bread, then toasted the bread as the bananas were cooking.

Ingredients

    1 Tbsp softened butter, divided
    1 medium banana, peeled and sliced
    1 tsp brown sugar
    1 tsp honey
    ½ tsp ground cinnamon, divided
    2 slices whole wheat sandwich bread (I used Fiber One W.W. bread)

Tips

Try substituting apples for the banana.
A little peanut butter spread on the inside of the bread would be nice, too.


Directions

- In small skillet melt 1 tsp butter over medium-low heat.
- Add banana slices
- Sprinkle with brown sugar.
- Cook until caramelized, about 2-3 minutes per side, stirring occasionally.
- When done, stir in 1/4 tsp cinnamon.

Meanwhile,
- Combine remaining 2 tsp butter, honey, and remaining 1/4 tsp cinnamon in a small bowl.
- Spread one side of each piece of bread with the cinnamon honey butter.
- Toast in toaster oven, butter side up.

Spread banana mixture on unbuttered sides of toast, cut in half, and enjoy!
