Ingredients

1 c dry quinoa
4 oz. raw pumpkin, in chunks
1 T honey
5 T olive oil, divided
1/2 c chopped walnuts
1/2 c craisins
1/4 c chopped fresh mint
1/2 c chopped fresh parsley or cilantro
1/4 c lemon juice
salt
Tips
You can substitute 4 t of dry mint for the fresh.
Directions
Preheat oven to 350 F. Mix honey with pumpkin chunks and put into a pan covered with baking paper. Drizzle 1 T olive oil and a little salt on pumpkin, and bake 20 minutes. In the meantime, boil quinoa in salted water for 10 minutes. Place walnuts, craisins, mint, and parsley in a bowl with the quinoa and pumpkin and mix gentley. Add 4 T of olive oil and the lemon juice, along with salt to taste.
