    1 tsp olive oil
    1 red bell pepper
    4 oz cooked shrimp
    2 wheat tortilla
    2 slices pepper jack cheese
    1/4 cup salsa
    1/2 avacado


Heat grill. Heat olive oil in skillet. Saute red pepper. Remove from heat and add shrimp. Place 1 tortilla on grill. Top with 1 cheese slice, shrimp and pepper mixture, salsa, and avacado. Cover with remaining cheese and tortilla. Cook 4 minutes or until golden brown. Cut into wedges.
