    1 cup Rogers wheat bran
    1 cup 1% milk
    1 tbsp lemon juice
    1/3 cup canola oil
    1 egg
    2/3 cup brown sugar
    1/2 tsp vanilla extract
    1 cup all purpose flour
    1 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    1 large shredded carrot


Preheat oven to 375 degrees.

Mix milk with lemon, add to wheat bran and set aside.

Prepare muffin pans.

Mix oil, egg, brown sugar and vanilla and add to wheat bran mixture.

Sift together flour, baking soda, baking powder and salt and add to other ingredients.

Stir until just blended.

Add shredded carrot.

Spoon into muffin tins.

Bake for 15 to 20 minutes.

- I substituted carrots for raisins.
- I substituted 1 cup milk and 1 tbsp lemon juice for buttermilk.
