    5 1/2 Cup water
    1 1/2 Cup oriental soup base
    2 Cups vegetable broth or I use the Chicken broth below
    (2 packets Swanson Ckn Flavor Boost Broth)
    3 1/2 Cup button mushrooms sliced
    1/2 Cup sliced white onion
    2 Celery stalks sliced
    1/2 Cup sliced carrots
    3/4 Cup sliced red or green bell pepper
    1/2 cup chopped cilantro
    1 Tbsp grated fresh ginger root
    1 1/2 Tbsp Tamari soy sauce
    1/2 tsp black pepper
    1/2 block firm tofu cut into small blocks or pieces


the oriental soup base I use is actually the collection of any left over juices from stir fries... I place the juice in a plastic container and freeze it, and I keep adding to it till I am ready to add it to a soup.


add all ingredients into a pot except the tofu, bring to a boil then simmer for about 7 to 8 minutes. Add tofu and simmer another 2 minutes.
