Introduction

By cutting the sugar in half and substituting some of the butter with rinsed beans the cookies are tasty and a little healthier. My husband and kids like them. We've even fed them to guests without telling them that there were beans in the cookies until after they had said how good they were. Ingredients

    2.25 all purpose flour
    1 tsp baking soda
    1 tbsp cinnamon
    1 tsp salt
    .75 stick of unsalted butter
    1.25 cooked, rinsed beans (navy, garbanzo)
    .5 cup granulated sugar
    .5 cup brown sugar
    2 tbsp vanilla extract
    2 large eggs
    1.25 cup semi sweet chocolate chips

Tips

The cookies turn out fluffier than traditional chocolate chip cookies and do not spread out as much during baking.


Directions

In small bowl mix flour, baking soda, cinnamon, and salt. Cream beans in a food processor then cream beans and butter with sugar in mixer. Add vanilla and eggs one at a time to butter/bean mixture. Then add dry ingrediens until well blended. By hand mix in chocolate chips. Bake 350* for 9-11 minutes.
