    1 can lite coconut milk
    1/4 cup sucanat
    1 tsp vanilla extract
    1 tsp peppermint extract
    2 tbsp unsweetened cocoa powder
    1/4 cup Bailey's Irish Cream


Combine all ingredients except Bailey's in a mixing bowl and mix well with a whisk or hand mixer.

Pour the mixture into an ice cream maker and freeze according to manufacturer's instructions. Add Bailey's in last 2 minutes.

Transfer ice cream to a freezer-safe container and freeze for an hour or two for a more solid ice cream, or eat directly from ice cream maker for a soft-serve type dessert.
