Delicious and easy soup any time of year. Comes out very creamy, a little sweet and zesty. Delicious and easy soup any time of year. Comes out very creamy, a little sweet and zesty.
Number of Servings: 6


    1 Tbs EVOO
    1 samll onion, diced
    2 garlic cloves, minced
    2 Tbs. ginger, grated
    1 large apple, cored and diced
    1 1/2 lbs carrots, peeled & diced
    4 cups vegetable broth
    pinch of nutmeg
    salt & pepper to taste


In a heavy bottomed soup pot, add 1 Tbs EVOO over low-med heat. Add chopped onion and cook for about 5 minutes until translucent. Add minced garlic and ginger and cook a few more minutes. Add chopped apple and carrots, salt & pepper, cook for 5 minutes more. Add broth and turn up heat to medium, bring to a boil. Reduce heat to low and simmer 20 minutes until vegetables are tender.

Carefully transfer this mixture into a blender, add nutmeg, and blend until smooth. You might need to do 2 batches. Add salt & pepper to taste.
