Number of Servings: 8

Ingredients

    2 cups cooked black beans, rinsed and drained
    2/3 cups libby's pumpkin pie mix
    OR a mix of plain canned pumpkin and honey or agave nectar to taste
    1/2 cup unsweetened cocoa powder
    1/3 cup dried cranberries
    2 packets truvia
    2 tsp vanilla extract
    3/4 cup wheat germ, toasted
    1/4 cup ground flax seed

Tips

Options: Substitute banana and agave nectar for the pumpkin pie mix, and raisins for the cranberries. Add more truvia to taste. Add finely chopped nuts.


Directions

Process beans, pumpkin, cocoa powder, cranberries, vanilla and truvia. Stir in wheat germ and flax seed until it all comes together. shape into a rectangle (mine was about 4 by 8 by 1 inches; yours can be whatever shape you like) and cut into 8 equal pieces.

Wrap individually and store in fridge for 3 days or freezer for 1 month. Grab and go!
