    1 slice fresh bread, cubed
    1/2 cup water
    1 cup onion, finely minced
    1 clove garlic, minced
    1/4 cup fresh parsley, minced
    1 teaspoon dried oregano
    1/4 cup Egg Beaters
    1 pound lean ground beef
    black pepper to taste
    1 teaspoon Essence (Emeril spice mix)
    1/4 cup bread crumbs


In a small bowl soak the bread cubes in the water, then squeeze dry. In a large bowl combine the bread cubes and the remaining ingredients (except the Essence and bread crumbs). Mix together by hand until smooth. Cover and chill for half an hour.

Preheat oven to 400. MIx the 1/4 cup of bread crumbs and Essence in a small bowl. Shape the meat mixture into 1-inch balls and roll in the crumb mixture. Place the meatballs in individual, miniature muffin tin cups. Bake for 20 minutes or until golden and cooked through. Serve with tzatziki sauce as an appetizer or slice them in half and stuff some into a pita with tzatziki sauce, shredded lettuce, and sliced tomato.
Yeild 24 meatballs.
