Ingredients

1 cup water, boiling
1 pkg strawberry sugar-free Jello
2 cups plain, low-fat yogurt
1 cup fresh strawberries, mashed or pureed
1 cup crushed fresh pineapple, drained
or 1 cup crushed canned pineapple (in juice), drained
Tips
Another delicious alternative is to substitute ripe banana's in place of the pineapple for Strawberry-Banana Yogurt.
Directions
Bring water to boil, add Jello and refrigerate until gelatin has started to set and cooled. Stir in the yogurt and refrigerate in shallow dish until somewhat thickened (about 30-45 minutes). Add the strawberries and pineapple and whip until light and airy (about 2 minutes with an electric mixer).
Pour the mixture into freezer container and freeze until firm, about 2 hours. Note: You can portion control by pouring mixture into cupcake papers or individual snack size dishes.
Let stand at room temperature about 10 minutes before serving.
Note: You can use this recipe with different flavors of jello and other fresh fruits as well as fruits canned in fruit juices.
