I love mushrooms, and this soup really satisfies my cravings. I leave the soup chunky, but you could blend half and add it back into the soup to make it creamy. Ingredients

    1 Tbs EVOO
    1 cup onions, chopped
    3 cups fresh sliced mushrooms
    2 tsp fresh thyme
    2 Tbs sherry vinegar
    3 cups vegetable broth

Directions

Add EVOO and onions to a heavy bottomed soup pot over medium-low heat. Saute 5 min. Add mushrooms and thyme, saute 8 minutes until beginning to brown. Add sherry vinegar, let bubble. Add broth, bring to boil. Simmer for 10 minutes. Season with sea salt and freshly ground pepper.
