Ingredients

    Bacon, 2 medium slices, chopped small
    Onions, raw, 1/3 cup, minced
    Olive Oil, 1 tbsp
    Garlic, 2 cloves minced
    Tomato Sauce, 1 cup
    Milk, 3.25%, 1 cup
    Vodka, 6 fl oz.
    Sour cream, 1 tablespoon
    One box penne pasta

Tips

I never have prosciutto or pancetta on hand (too expensive), but I do keep some bacon frozen, because adding a little into recipes makes a huge difference in taste. Comes in very handy. Shallots are also not normally kept on hand, but mincing onions usually works just fine.


Directions

Chop bacon fairly small and saute in pan. When almost done, add minced onions, garlic, and extra tablespoon of olive oil if needed. Cook until onions are translucent. Add vodka and cook until vodka is reduced by half. Add tomato sauce and simmer until hot. Add milk and turn to low, continue cooking until hot. If you'd like sauce a bit creamier add a spoonful of sour cream, which I did and the calories are included in this recipe. Meanwhile, cook pasta according to package directions. Drain. Add pasta to sauce, cook on low for a minute or two, then transfer to a serving bowl.
