Ingredients

    16 oz. bag of Rising Moon potato onion pierogi
    1 large onion, chopped
    2 cloves garlic, sliced
    8 oz mushrooms, sliced
    14 oz can chopped tomatoes
    1 Tbsp tomato paste
    1/4 c. water
    2/3 c. frozen peas
    6 oz. mozzarella cheese

Directions

1. Saute onion, garlic, and mushrooms with cooking spray.
2. Add chopped tomatoes, tomato paste and water.
3. Season with Italian seasoning, salt, and pepper to taste
4. Add peas and cook until warm.
5. Add pierogies to a 9x13 inch casserole dish. Pile with tomato/pea mix and top with mozzarella cheese.
6. Bake at 350 degrees until the bubbly.
