Number of Servings: 4


    2 cups leftover cooked chicken meat
    3 large celery stalks, cut into medium chunks
    1 small bunch scallions, heads and ends removed
    4 Tbsp curry powder
    1 cup mayonnaise
    juice from 1/2 small lemon


Place chicken, scallions, and celery in bowl of food processor. Pulse until chopped to desired consistency (mine was finely chopped). In separate large bowl, mix curry powder, mayo and juice from 1/2 lemon. Add chicken mixture and fold in until well coated. Season with salt and pepper to taste, serve on a bed of Romaine lettuce.

Serving Size: 4 1-cup servings
