    2 T butter
    1 C milk
    3 eggs
    1 C all-purpose flour
    1 t baking powder
    1 t salt
    3 C (12 oz.) shredded Monterey Jack cheese
    2 packages (10 oz. each) frozen chopped spinach, thawed and well drained
    1/2 C diced red bell pepper


After baking, these can be frozen, stored in a Ziploc bag, and reheated in a 325 degree oven for 15 minutes.
This recipe is adapted from "100 Best Appetizer Recipes."


Preheat oven to 350 degrees Farenheit. Melt butter in 13X9in. pan.
Beat milk, eggs, flour, baking powder, and salt in medium bowl until well blended. Stir in cheese, spinach, and bell pepper; mix well. Spread mixture over melted butter in pan.
Bake 40-45 minutes or until firm. Let stand 10 minutes before cutting into triangles or squares

Serving Size: 48 triangles or 24 squares
