A simple dinner for one! This is really tasty and easy to make. A simple dinner for one! This is really tasty and easy to make.
Number of Servings: 1


    85 Grams Shell Pasta
    Spray of cooking spray
    1 cup cubed eggplant
    1 cup chopped tomatoes
    1 oz kalamata olives, minced
    1 tsp basil (ground) or 1 tbsp (fresh)
    1 oz soft goat cheese


Cook the pasta according to directions. Drain.
Cook the eggplant in a fry pan sprayed with cooking spray, for about 8 minutes or until soft and brown. Add the tomatoes and olives, and cook for another 8-10 minutes until soft and a little bit bubbly. Add the basil.
Toss shell pasta with the eggplant mixture, and stir in the goat cheese until it melts.

Serving Size: Makes dinner for one.
