Ingredients

7 oz Whole Wheat Pasta, Elbow Macaroni
1.5 cups Butternut Squash (Steam in Bag)
1/2 cup onion
1/2 cup chicken or vegetable broth
1 cup SoyMilk
5 oz shredded Reduced Fat 2% cheese (your favorite, I used Colby jack and Four cheese blend)
2 tbsp Parmesan Cheese
1 tsp Mustard powder
1 tsp garlic Powder
Black pepper to taste
1/4 tsp Cayenne Pepper
1-2 tbsp Panko Bread Crumbs
Directions
Pre-heat oven to 375
Cook Macaroni according to package directions
If using Steam in Bag Butternut squash, cook according to directions on bag until squash is very soft.
If using fresh squash boil or steam until soft.
Heat a saucepan on medium heat.
Roughly chop onion and then add to a food processor and chop finely
Add onions to hot pan and saute for several minutes
Meanwhile, puree cooked squash in food processor.
Once onions have cooked for a few minutes, add pureed squash. Heat through.
Add in broth, milk, and seasonings. Heat to simmer
Remove from heat and stir in cheeses
Pour cooked pasta into an 8-9inch baking dish.
Pour cheese mixture on top and stir gently to combine with pasta.
Top with panko bread crumbs and a little more Parmesan(optional)
Bake for 30 minutes or until top is golden brown
