    The white part of 2 green onions, chopped
    1 stalk celery, chopped
    1 Tbsp butter
    1 Tbsp olive oil
    1 cup chicken broth
    1 cup water
    1 ripe avocado
    1/3 cup heavy cream
    1 tsp curry powder
    salt & pepper, parsley to taste


Chop up the white part of two green onions and celery.
Sauté in butter and olive oil
Add chicken broth & water, bring just to the boil. Add cream and curry. Purée or blenderize with peeled avocado (the black-skinned variety, higher in fat, lower in carbs), salt & pepper. Garnish with a little parsley, fresh or dried. This is good either hot or chilled.
