Number of Servings: 10

Ingredients

    2 cups dry quinoa
    1 cup frozen corn
    1.5 cups black beans, canned
    1 cup red pepper, chopped
    0.5 cups green peppper chopped
    1 jalapeno pepper, seeded and chopped
    1 cup red onion, chopped
    4 tbsp fresh cilantro, chopped
    Juice of 1.5 limes

Tips

You can add a little chili powder, cayenne peper, or other southwest style spice for additional favor.


Directions

Bring 4 cups water to boil, add quinoa. Bring to boil,
cover and simmer until water is absorbed.
While quinoa is cooking chop all ingredients and thaw corn. Add to large bowl. Add lime juice. When quinoa is done, add to other ingedients, mix well. Serve warm or cold.
