    5 medium zucchini, grated
    1 large onion, grated
    1/2 cup flour
    3 large eggs
    4 oz feta cheese
    2 tbsp chopped fresh dill
    2 tbsp chopped fresh mint
    1/4 cup chopped fresh parsley
    salt and pepper to taste
    3/4 cup bread crumbs


This is great by itself, but also great on sandwich bread with tzatziki sauce.


Mix all ingredients together except for the bread crumbs. Grease a 9x13 pan. Spread half of the breadcrumbs evenly over the bottom of the pan. Top with zucchini mixture. Top with remaining bread crumbs. Bake at 350 for 45 minutes.
