Ingredients

    6 small potatoes, peeled
    1 small head cauliflower, chopped
    1 cup shredded sharp cheddar cheese
    1 cup cream mushroom soup
    2 tbsp light mayo
    1/2 cup panko bread crumbs
    1 tbsp butter

Directions

Parboil the potatoes and cauliflower until almost tender. In a large oven safe dish, mix potatoes and cauliflower with soup, cheese and mayo. Top with breadcrumbs and butter and bake at 400 degrees for 20 minutes or until bubbly and browned.
