Ingredients

    Talapia Fillet
    Coarse sea salt, 1 tsp
    Paprika, .25 tsp
    *Bell Pepper - Yellow, 2 oz , sliced thinly
    Several cloves of wild garlic or chive
    Scallions, raw, 1 medium (4-1/8" long, split in half) or a stalk of baby leek
    Butter, unsalted, 1 pat (1" sq, 1/3" high)
    Aluminum Foil or parchment paper
    Spray Canola oil

Tips

Growing wild garlic provides an interesting flavor option. Using baby leek gives a milder flavor than scallion.


Directions

Get a square of aluminum foil or parchment paper approx. 15" x 12"
Spray with oil
Sprinkle a bed of coarse sea salt
Place Talapia fillet
Sprinkle with paprike
Place garlic cloves,leek and pepper slices on fish
Divide butter along length
Fold foil and seal to make a pouch
Bake at 350 F for 18 minutes
