Gotta love this! I know everyone in my family does :) Gotta love this! I know everyone in my family does :)
Number of Servings: 8


    1 large eggplant
    3 large zucchinis
    3 TBS of olive oil
    1 TBS of dried rosemary
    Pinch of kosher salt


Preheat oven 350 degrees.
Slice the eggplant and zucchini into thin round slices.
Spread the slices in baking dish and sprinkle the kosher salt over them.
Drizzle the oive oil on top as well as the rosemary.
Bake in oven for 40 min. take out and flip the slices over. Put back in for anither 30 min or so.
