Ingredients

1/2 cup pine nuts
1/2cup pumpkin seeds
1 box 375 grams catelli smart pasta rotini
2 zuchini sliced 4 oz brocoli chopped into florets
1 cup soft cheese ( I used a combination of full fat cream cheese anf low fat goats milk cheese)
2/3 cup 1% milk
1 tbsp chopped fresh Basil or 1 tsp dried
4 oz mushrooms sliced
3 oz blue cheese
salt and pepper to taste
Tips
serve with a nice green salad
Directions
Toast the pinenuts and pumpkin seeds under the broiler until toasted watch closely so they don t burn
Cook the pasta in salted water until tender 8 = 10 mins
Steam zuchini in a steamer or microwave until tender
put soft cheeses into a pan and heat gently stirring constantly add the milk and stir to mix .
saute mushrooms in a bit of butter when cooked thru add to cheese and add Basil add blue cheese and stir to mix
drain the pasta and add the steamed veggies mix together add the cheese sauce and add the nut- seed mixture Garnish with more Basil and serve
