    2 lbs boneless skinless chicken breast
    3 Tbsp Olive oil
    1 lrg Onion diced
    3 stalks celery, diced
    1 bell pepper, diced
    3 Chipotle peppers in adobo sauce, minced
    3 baby red potatos, diced
    3 large mushrooms, diced
    2 large carrots, sliced
    1 cup canned pumpkin
    1 can kidney beans, drained
    1 can white beans, drained
    1 cup light beer
    1 shot tequila
    3 cups water
    Salt to taste


1.Place a large soup pot over medium heat. Add olive oil
2. cut chicken breasts in to 4ths an place in bottom of pot.
3. While chicken is browning, chop onion, celery, bell peppers and chipotles. Place in a small bowl
4. turn chicken to brown on other side.
5. While browing on other side, chop potatos, mushrooms and carrots. Place in another small bowl seperate from onions.
6. When chicken is cooked through, remove from pot and place on a plate to cool.
7. Add onions, clerey and peppers from 1st bowl to pot. Add shot of tequila, stir and saute until onions are translucent and soft.
8. Add remaining veggies, beans and pumpkin
Stir to combine.
9. add beer, stir and cook for a few minutes.
10. add water to just cover veggies. Simmer until potatos and carrots are soft.
11. shred chicken, add to pot and cook until heated though
