    4 very thinly sliced zucchini or yellow squash - try a mixture (about 28 oz/794 g)
    1 1/2 teaspoon kosher salt, divided
    1/4 small red onion, very thinly sliced
    2 tablespoons olive oil
    2 tablespoons white wine vinegar
    1/4 teaspoon fresh ground pepper


IN a colander, toss zucchini/squash with 1 teaspoon of kosher salt. Let sit until softened, about 30 minutes (over a plate or sink). Rinse and pat dry.

IN a medium bowl toss the squash with the red onion, oil, vinegar, 1/2 teaspoon kosher salt & pepper.

REFRIGERATE for at least 15 minutes (and up to 8 hours) before serving.
