    3 eggs
    1/4 + 2TBSP truvia
    1/3 cup fresh lemon juice

    1.5 tbsp lemon zest
    2 tbsp butter, in small pieces at room temp.


Combine eggs, white sugar and lemon juice in top of double boiler. Whisk over med-high heat for about 10 minutes until thick and pale (or until mixture reaches 160 F - and it stalls around 140 and takes a bit to come up. Be patient.)

Add butter and zest. Whisk until combined and no lumps of butter remain. Strain into separate dish, cover with plastic wrap directly on surface to prevent skin.

*The key is slow and steady. You donít want the eggs to heat up too fast otherwise they will scramble.

Serving Size: Makes 32 1 tbsp servings, or about enough for 24, 4" tarts
