Ingredients

1 3/4 cups flour
3/4 cup sugar
1/2 cup plus 6 teaspoons packed light brown sugar - the 6 tsps is for the tops of the muffins to be sprinkled on before baking*
2 teaspoons baking powder
1 teaspoon ground ginger
2/3 cup sour cream
1/2 cup vegetable oil
1 tablespoon honey
2 eggs
1 1/2 cups peeled and chopped peas, about 1/4 inch dice (2 pears)
Tips
These taste great warm out of the oven, as well as at room temperature the next day -- good make-ahead breakfast.
Directions
Preheat the oven to 400oF, and line a 12 cup muffin pan with paper muffin cups.
Measure into a bowl the dry ingredients and whisk together (except the 6 teaspoons of brown sugar).
In a large measuring cup whisk the sour cream, oil, honey and eggs together and then fold this into the dry ingredients.
Lastly, mix in the diced pear and then divide the batter evenly among the muffin cups.
Sprinkle each one with 1/2 teaspoon of brown sugar* and then bake for 17 - 20 minutes. Remove to a cooling rack.
