    4 large portabella caps
    1 cup quinoa
    1 sweet bell pepper
    .5 cup marinara sauce of your choice


clean the stem and gills from the mushroom.
prepare the quinoa per instructions on package
chop and saute the pepper until tender
rub the outside of the mushroom lightly with olive oil.
mix the quinoa and saute pepper.
place one tbsp of marinara on the inside bottom of each mushroom
fill with the quinoa mixture, top with one tbsp of marinara and sprinkle with cheese.
bake at 375 for 15 minutes and then broil for 5 minutes to brown the cheese. ENJOY
