Ingredients

    *Ancient Harvest Traditional Whole Grain Quinoa, 1 cup
    Water, tap, 2 cup (8 fl oz) (remove)
    Scallions, raw, .5 cup, chopped (remove)
    Carrots, raw, 2 cup, grated (remove)
    Ginger Root, 2 tsp (remove)
    Olive Oil, 2 tbsp (remove)
    Orange Juice, .5 cup (remove)
    coriander, fresh chopped, 0.5 cup (remove)
    salt

Directions

Rinse Quinoa. Bring 2 cups of water to boil with a little salt. Add rinsed quinoa, and cook on low for 15 mins. While quinoa is cooking, shred carrots, wash and chop scallions, grate ginger, wash and chop cilantro. Heat olive oil in large frying pan. Stir fry carrots, scallions, ginger and cilantro. When quinoa is cooked, drain any excess water and add quinoa to frying pan. Add orange juice and heat through.
