Ingredients

2 red peppers
1 green pepper
1 white onion
bacon/ham (meat of choice)
12 eggs
Tips
Makes 24 large muffin-size Frittatas. Great for a quick breakfast through the week - haven't tried freezing them yet, but probably will next. :-).
Directions
Preheat oven 325F
Need muffin tin(s), and 1 skillet/pan for cooking
Dice Peppers and cook meat if needed. Then dice the onion and cook it in the same pan as the meat (drain grease if needed). While the onion cooks, dice the cooked meat. Mix all the veggies together. In a different bowl beat eggs.
Spray/grease muffin tin(s), put veggy mixture into the muffin tins (fill till about half full), then add egg until its 4/5ths full (the egg does expand a bit so don't want it filled to the top).
Cook for 25-30 minutes (if using mini-muffin tin, may need to adjust time)
