Ingredients

    Two large eggs, light cooking spray (I used olive oil spray), onions, spinach, stewed tomatoes (I used Mexican style) reduced fat shredded mozzarella cheese. Desired seasoning to taste.

Tips

Straining the stewed tomatoes first helps reduce too much liquid so omelet doesn't fall apart in Pam.


Directions

Sauté onion in non stick frying pan add in spinach I used baby spinach add cooking spray if needed. When cooked push to one side of pan if using a smaller one remove onto small plate. Crack open two eggs in bowl with a fork or whisk mix well add a tablespoon of water if too thick. In a medium-high heated non stick pan spray cooking spray poor in mixed eggs. Add first cheese, stewed tomatoes, and sauteed onions & spinach on top off eggs. Fold in half, with a non stick spatula, cook until side is done then flip to other side. About 4 minutes on each side.
