    4 1/2 Cups Shredded Hashbrowns (Thawed)
    4 1/2 Tbsp Melted Butter (I used cardio choice light or smart balance light)
    Dash Of Salt
    Dash Of Pepper
    10 Eggs
    3 Cups Shredded Cheese
    12 Slices Turkey Bacon (Chopped Into Pieces)


Preheat oven to 400 F. In a bowl combine the salt, pepper, butter and hashbrowns. Spray a muffin pan with the cooking spray and spoon the mixture into each muffin slot, making sure to pat it down on the bottom and sides. Once that's done bake for 10 minutes. Then in a bowl combine the eggs, cheese and bacon. Spoon the mixture on top of the hashbrowns and bake for another 15 - 20 minutes.
