    1, 14.5 oz Can Diced Tomatoes with Zesty Chilies
    1, Medium Sweet Onion, Finely Chopped
    4, Boneless Skinless Chicken Breasts, (2lb)
    6, Cloves Garlic, Minced
    1/2 tsp Sugar
    8 cup Chicken Broth
    4-5 Chipotle Peppers in Adobo Sauce, Finely Chopped
    1 cup Shredded Monterey Jack Cheese, Divided
    2 Large Limes for Juice
    Santa Fe Style Tortilla Strips
    Sour Cream
    Fresh Cilantro Finely Chopped


Chicken can be baked, add 2 drops of Liquid Smoke to each Breast. Diced Avocado is a nice addition to this soup.


Rub Chicken Breasts with Adobo Sauce, and Grill over indirect heat using Mesquite Chips. About 8 minutes per side. When Cool, Shred and set aside. In a medium Stock Pot, bring Broth,Tomatoes, Garlic, Onion, Sugar and Chipotle Peppers to a boil, reduce heatand simmer for 20 minutes. (For a smooth soup, use a Hand-Held blender). Add Shredded Chicken, and heat until hot. In each bowl, add Cheese, Tortilla Strips, and Sour Cream if desired. Squeeze in Juice of 1 wedge of Lime. Garnish each bowl with Chopped Cilantro, Enjoy!
