    - 1.5 Cups flour
    - 1 tsp baking powder
    - 1 tsp baking soda
    - 1/2 tsp salt
    - 3 large bananas, mashed
    - 3/4 cup white granulated sugar
    - 1/3 cup butter, melted
    - 1 egg


I have not tried this recipe any other way besides sifting and folding, so I am not sure about the necessity. However, I like the method because the muffins end up being so small and the slightest change can impact a muffin in a big way!

If your bananas are not fully mashed, don't worry. As long as banana chunks aren't too big, it might be a nice change.


Preheat the over to 350 and grease or line mini-muffin tins. Sift together the flour, baking powder, baking soda, and salt. In a mixing bowl, mix together the sugar, bananas, butter, and egg. FOLD in the other dry ingredients. The mixture should seem "in between" dough and batter for a thick batter. Put 1 tbsp of batter for each mini-muffin. There should be just enough to make 48 mini-muffins or 12 regular muffins.

Serving Size: Makes just enough for 48 mini-muffins!
