- 1.5 Cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3 large bananas, mashed
- 3/4 cup white granulated sugar
- 1/3 cup butter, melted
- 1 egg
I have not tried this recipe any other way besides sifting and folding, so I am not sure about the necessity. However, I like the method because the muffins end up being so small and the slightest change can impact a muffin in a big way!
If your bananas are not fully mashed, don't worry. As long as banana chunks aren't too big, it might be a nice change.
Serving Size: Makes just enough for 48 mini-muffins!
